  • 1 Egg pan fried
  • 1 Tortilla pan fried
  • 1 Heirloom tomato sliced
  • 1 Avocado mashed
  • 1 tbsp nutrition yeast
  • 1 tbsp pesto (lemon basil garlic olive oil)
  • 1 Salt pepper miss dash to taste

Directions

    Pan fry the tortilla till nice and browned

    Add olive oil to pan and egg..add a shot of water to pan and cover with lid.
  3. 3
    After one minute flip egg, cover with lid and turn off heat.
  4. 4
    Egg should be done in a minute or two, depending on how you like it.

    Layer avocado, pesto, tomato, egg and season with nutritional yeast and spices.
