Ingredients
- 1 lrg flour tortilla (fat-free can be found in the supermarket)
- 2 x Large eggs (or possibly egg substitute)
- 1/4 c. onion (minced)
- 1/4 c. green pepper (minced)
- 1 Tbsp. green chiles (minced)
- 1/4 c. shredded cheddar cheese (low-fat or possibly fat-free)
- 1/4 c. salsa
- 1 Tbsp. lowfat sour cream (low-fat or possibly fat-free)
- 1 Tbsp. extra virgin olive oil or possibly canola oil
Directions

1Saute/fry onion and green pepper in oil.

2Add in green chiles.

3Beat Large eggs in bowl then add in to vegetable mix in pan.

4Cook till Large eggs are set.

5Heat tortilla in microwave for 20 seconds and set on plate.

6Put egg/vegetable mix down center of tortilla and add in shredded cheese across mix.

7Roll tortilla and make sure seam side is down.

8Top with salsa and lowfat sour cream.

9NOTE: You may add in low-fat ham or possibly turkey bacon (minced) to this recipe for a delicious variation.
