Ingredients

  • 1 lrg flour tortilla (fat-free can be found in the supermarket)
  • 2 x Large eggs (or possibly egg substitute)
  • 1/4 c. onion (minced)
  • 1/4 c. green pepper (minced)
  • 1 Tbsp. green chiles (minced)
  • 1/4 c. shredded cheddar cheese (low-fat or possibly fat-free)
  • 1/4 c. salsa
  • 1 Tbsp. lowfat sour cream (low-fat or possibly fat-free)
  • 1 Tbsp. extra virgin olive oil or possibly canola oil

Directions

    Saute/fry onion and green pepper in oil.

    Add in green chiles.

    Beat Large eggs in bowl then add in to vegetable mix in pan.

    Cook till Large eggs are set.

    Heat tortilla in microwave for 20 seconds and set on plate.

    Put egg/vegetable mix down center of tortilla and add in shredded cheese across mix.

    Roll tortilla and make sure seam side is down.

    Top with salsa and lowfat sour cream.

    NOTE: You may add in low-fat ham or possibly turkey bacon (minced) to this recipe for a delicious variation.
