Broccoli Casserole

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 (3 oz.) pkg. cream cheese, softened
  • 1/4 c. crumbled Blue cheese
  • 1 c. milk
  • 2 (10 oz.) pkg. frozen chopped broccoli, cooked and drained (al dente)
  • 1 lb. fresh cooked mushrooms, drained
  • 1/3 to 1/2 c. Ritz crackers, crumbled

Directions

    Melt butter; blend in flour and cheeses.

    Add milk; cook and stir until boiling.

    Gently stir in broccoli.

    Place in 1-quart casserole; top with cracker crumbs.

    Bake at 350° for 30 minutes. Serves 8 to 10.
