- 7.5 oz. ready bake buttermilk biscuits (10) or make your own
- 2 c. chopped broccoli, cooked and well drained
- 5 oz. Cheddar cheese, shredded (tofu or soy)
- 1 large plum tomato, diced
- 1/4 c. minced scallion or onion
- 1 Tbsp. plus 2 tsp. margarine, melted
Directions

1Preheat oven to 400°.

2Spray-grease muffin tins and press biscuits in, one at a time, stretching out into it.

3Mix the rest of the ingredients in a bowl and spoon equal amounts into biscuit-lined muffin tin.

4Can put water in muffin tins not being used.

5Can eat hot or cold after being cooked in 400° oven for 10 minutes.
