Broccoli Cheddar Cups

  • 7.5 oz. ready bake buttermilk biscuits (10) or make your own
  • 2 c. chopped broccoli, cooked and well drained
  • 5 oz. Cheddar cheese, shredded (tofu or soy)
  • 1 large plum tomato, diced
  • 1/4 c. minced scallion or onion
  • 1 Tbsp. plus 2 tsp. margarine, melted

    Preheat oven to 400°.

    Spray-grease muffin tins and press biscuits in, one at a time, stretching out into it.

    Mix the rest of the ingredients in a bowl and spoon equal amounts into biscuit-lined muffin tin.

    Can put water in muffin tins not being used.

    Can eat hot or cold after being cooked in 400° oven for 10 minutes.
