  • 2 boxes Jiffy corn bread or corn muffin mix
  • 1 (10 oz.) pkg. frozen, chopped broccoli, thawed and drained (not cooked)
  • 1 large onion, chopped
  • 6 oz. cottage cheese
  • 1/2 c. margarine, melted
  • 4 large eggs, well beaten
  • 1 tsp. salt

Directions

    Mix all ingredients, adding corn bread or corn muffin mix last. Mix well and pour into 9 x 13 casserole.

    Bake 30 minutes at 425°. Serve hot.
