Broccoli Cornbread

  • 1 stick margarine, melted
  • 4 eggs, beaten slightly
  • 1 box chopped broccoli, thawed
  • 1/2 tsp. each: salt and pepper
  • 1 small onion, chopped
  • 1 c. medium sharp shredded cheese
  • 6 oz. cottage cheese
  • 1 box Jiffy cornbread mix or 2 c. self-rising cornmeal

Directions

    Add all ingredients together, adding cornbread mix last.

    Bake in greased muffin tins for 30 to 40 minutes at 350°.

    This makes 12 muffins plus an 8-inch round pan full.
