Broccoli Egg Puff

- 1 lb. broccoli
- 2 Tbsp. flour
- 1/2 tsp. baking powder
- 5 eggs, beaten
- 1 c. cottage cheese (small curd)
- 4 slices bacon, crisp-cooked, drained and crumbled
- 1/2 c. shredded Cheddar or Swiss cheese (2 oz.)
Directions

1Cut off broccoli buds.

2Set aside.

3Chop remaining stalk. Cook, uncovered, in small amount of boiling salted water for 5 minutes.

4Add reserved buds; cook 5 minutes.

5Drain.

6Set aside. In small mixing bowl, beat eggs.

7With a wire whisk or rotary beater, beat in flour mixture.

8Stir in cottage cheese and bacon. Evenly spread broccoli in bottom of a greased 10 x 6 x 2-inch baking dish. Pour egg mixture evenly over broccoli.

9Bake, uncovered, at 350° for 20 minutes.

10Sprinkle with Cheddar or Swiss cheese.

11Bake 3 minutes more or until center is almost set and cheese is melted.

12Let stand 5 minutes before serving.
