  • 1-3/4 cup all-purpose flour
  • 1 cup quick-cooking oats
  • 1/4 cup sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 egg, lightly beaten
  • 1 cup chopped fresh broccoli, blanched
  • 1/2 cup shredded Cheddar cheese

    In a large bowl, combine flour, oats, sugar, baking powder and salt.

    In a small bowl, mix milk, oil and egg.

    Stir into dry ingredients until just moistened.

    Fold in broccoli and cheese.

    Spoon into greased or paper-lined muffin cups.

    Bake at 400F for 18 to 20 minutes or until top springs back when lightly touched.
