- 1-3/4 cup all-purpose flour
- 1 cup quick-cooking oats
- 1/4 cup sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 egg, lightly beaten
- 1 cup chopped fresh broccoli, blanched
- 1/2 cup shredded Cheddar cheese
Directions

1In a large bowl, combine flour, oats, sugar, baking powder and salt.

2In a small bowl, mix milk, oil and egg.

3Stir into dry ingredients until just moistened.

4Fold in broccoli and cheese.

5Spoon into greased or paper-lined muffin cups.

6Bake at 400F for 18 to 20 minutes or until top springs back when lightly touched.
