  • 1 3/4 c. all-purpose flour
  • 1 c. quick cooking oats
  • 1/4 c. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. milk
  • 1/3 c. vegetable oil
  • 1 egg, lightly beaten
  • 1 c. chopped fresh broccoli, blanched
  • 1/2 c. shredded Cheddar cheese

Directions

    In a large bowl, combine flour, oats, sugar, baking powder and salt.

    In a small bowl, mix milk, oil and egg; stir into dry ingredients just until moistened.

    Fold in broccoli and cheese. Spoon into greased or paper-lined muffin cups.

    Bake at 400° for 18 to 20 minutes or until top springs back when lightly touched. Yield:
