Broccoli Mushroom Soup

- 1 lb. fresh broccoli
- 8 oz. fresh mushrooms
- 8 oz. butter
- 1 c. flour
- 1 qt. half and half
- 4 bouillon cubes, dissolved in 1 qt. water (4 c.)
- 1 tsp. salt
- 1/4 tsp. white pepper
- 1/4 tsp. crushed tarragon
Directions

1Clean and cut broccoli.

2Steam in 1/2 cup water until tender. Set aside.

3Melt butter in saucepan over medium heat.

4Add flour to make a roux.

5Cook 2 to 4 minutes.

6Add bouillon, stirring with a wire whip and bring to a boil.

7Add broccoli, mushrooms (sliced), half and half and spices.

8Heat, but do not boil.
