  • 14-16 oz broccoli florets
  • 1 lg leek-cleaned-cut into 1/2 circles
  • EVOO/Pam
  • 1/2 tbsp butter
  • I Can't believe it is not Butter
  • 1-2 tbsp white wine
  • 2-3 tbsp chix broth/stock
  • juice from 1/2 lemon
  • s&p

    1. saute leeks in Pam/EVOO-till soft

    2.deglaze w/wine-ck till evaporated

    3.add broth-ck till evaporated & leeks very soft

    4. ck broccoli in salted h2o for 10 min-drain

    5.put back in pot add butter& I can't believe it is not butter & leeks

    6. season w/ lemon juice-s&p

    7. puree w/ immersion blender-adjust seasoning
