- 2 Tbsp. butter
- 6 c. chicken broth
- 1 leek, chopped
- 1 potato, chopped small
- 1 celery stalk, chopped
- 1 bay leaf
- 2 bunches broccoli, chopped including some of stem
- 1/2 c. cream
- salt and pepper to taste
Directions

1Cook veggies in butter until soft.

2Add broth and bayleaf. Cook several minutes on medium high heat to meld all flavors. Puree in blender or food processor till smooth.

3Put back in pan and add 1/2 c. cream.

4Simmer 45 minutes.

5Serve with a dollop of sour cream in center.
