Ingredients
- 2 c. chopped celery
- 2 c. chopped onions
- 2 lb. chopped broccoli (frozen or fresh)
- chicken broth
- 2 tsp. salt
- 2 tsp. nutmeg
- 1 tsp. white pepper
- 6 to 8 c. whole milk
- 1 lb. cubed Velveeta cheese
- 1/4 lb. grated Cheddar cheese
Directions

1Simmer celery, onions and broccoli in enough chicken broth to cover the vegetables and simmer until soft.

2Add the salt, pepper, nutmeg and milk.

3Heat until almost boiling, but do not boil. Thicken with a cornstarch mixture (starch and water).

4Add the cheeses.

5Stir and remove from heat.

6Cover and let stand for 10 minutes.

7Stir again to blend in cheese.
