Broccoli Soup

Ingredients
- stalks from 1 large bunch broccoli
- 1 small onion
- 1 small celery stalk
- 1 stalk parsley
- 1/4 tsp. black pepper
- 1/4 tsp. nutmeg
- 1 bay leaf
- 1/2 tsp. salt
- 1 pt. chicken broth
- 1/4 c. light cream or half and half
Directions

1Clean and coarsely chop vegetables.

2Place all ingredients, except cream, in a 2-quart saucepan, adding a little more stock or water, if needed to cook vegetables.

3Bring to a boil, reduce heat, cover and simmer until vegetables are tender, 30 to 45 minutes. Ladle the contents of the pan into a blender and puree (completely).

4Keep one hand on lid of blender so hot liquid does not spray you.

5Add cream and reheat to serve.
