Broccoli-Stuffed Shells

- 3 c. broccoli florets
- 1 (15 oz.) Ricotta cheese
- 2 eggs, beaten
- 1/4 c. grated Parmesan cheese
- 1/4 tsp. black pepper
- 1/2 tsp. nutmeg
- 1/2 tsp. oregano
- 24 jumbo shells, cooked
- 3 c. tomato sauce
Directions

1Steam or boil broccoli florets until crunchy tender.

2Allow to cool.

3Mince florets, either with a sharp knife or in food processor, fitted with a sharp blade.

4Combine broccoli with Ricotta, eggs, Parmesan, pepper, nutmeg and oregano and stir until well combined.

5Stuff each cooked shell with 1 tablespoon of mixture.

6Pour sauce over shells and bake at 375° until hot.
