Broiled Catfish Fillets

- 4 catfish fillets
- 4 oz. oleo
- lemon juice
- 1/4 c. dry white wine
- salt, pepper and paprika
- Parmesan cheese
Directions

1Season the fillets with salt and pepper to taste.

2Put oleo in shallow baking dish in hot (400° to 500°) oven until the oleo is browned.

3This gives a distinctive flavor.

4Place fillets upside down in sizzling hot oleo and return to oven for 7 to 10 minutes. Turn with spatula and baste.

5Sprinkle each piece with lemon juice, wine, Parmesan cheese and paprika.

6Return to oven until done (approximately 5 minutes).

7Run under broiler quickly.

8Baste fish with sauce and serve in sauce.

9Garnish with fresh dill.
