  • 4 3/8 cups cheese brousse, whey cheese from Goat or sheep milk
  • 1 pastry sweet dough
  • 3 eggs
  • 3/4 cup sugar
  • 1/2 orange zest
  • 1/2 lemon zest
  • icing sugar

Directions

    Drain cheese in a colander.

    Preheat oven to 425 degrees Fahrenheit.

    Roll out the dough, spread in a pie pan, and refrigerate.

    Whisk the eggs with the sugar in a bowl until the mixture whitens. Add the drained cheese and mash with a fork. Add the orange and lemon zest. Mix.

    Fill the pie shell with the mixture and bake for 30-35 minutes. Cool.

    To serve, sprinkle with icing sugar.
