- 4 3/8 cups cheese brousse, whey cheese from Goat or sheep milk
- 1 pastry sweet dough
- 3 eggs
- 3/4 cup sugar
- 1/2 orange zest
- 1/2 lemon zest
- icing sugar
Directions

1Drain cheese in a colander.

2Preheat oven to 425 degrees Fahrenheit.

3Roll out the dough, spread in a pie pan, and refrigerate.

4Whisk the eggs with the sugar in a bowl until the mixture whitens. Add the drained cheese and mash with a fork. Add the orange and lemon zest. Mix.

5Fill the pie shell with the mixture and bake for 30-35 minutes. Cool.

6To serve, sprinkle with icing sugar.
