Brown Rice With Pine Nuts

  • 1 c. brown rice
  • 1 c. water
  • 1 1/2 c. chicken broth
  • 1 Tbsp. oil
  • 1/4 c. shredded zucchini
  • 1/4 c. shredded carrot
  • 1/4 c. diced onion
  • 2 tsp. soy sauce
  • 1 Tbsp. sesame oil
  • 1/4 c. pine nuts

Directions

    Prepare rice according to package directions using chicken broth and water as cooking liquid.

    Meanwhile in a cold skillet, toast pine nuts over low heat shaking pan to brown nuts evenly. Remove from skillet and save.

    Add to skillet the oil and sesame oil and saute vegetables.

    Mix pine nuts and vegetables with cooked rice.

    Season to taste with soy sauce.
