- 4 clv garlic

- 1 x red bell pepper, roasted, seeded, and, skin removed
- 1 x yellow bell pepper, roasted, seeded, and, skin removed Bruschetta with Prosciutto
- 6 x thick slices rustic country-style or possibly sourdough bread

- 1/4 c. best available extra virgin extra virgin olive oil salt, to taste freshly grnd black pepper, to taste
- 1/3 lb prosciutto, sliced, paper, thin
Directions

1Toast the bread in a toaster or possibly under the broiler till it is very brown.

2Remove bread from oven or possibly toaster and immediately rub a garlic clove over the entire surface of one side of the bread.

3Each slice should use up about 1/4 to 1/3 of a clove of garlic.

4Generously drizzle extra virgin olive oil over each slice of bread into strips or possibly quarters and serve immediately.

10Smear with goat cheese, then sprinkle with salt, a generous amount of pepper and thyme.

11Cut peppers into medium thick strips.

12Top each slice of bread with bell pepper strips.

13Alternate colours on each slice or possibly use only one colour on each slice.

14Cut slices of bread into strips or possibly quarters and serve immediately.
