- 1 large bell pepper, chopped
- 12 tomatoes
- 2 pkg. frozen spinach, chopped
- 2 large onions, chopped
- 1/4 c. parsley, chopped
- 6 stalks celery, chopped
- 4 carrots, chopped
- 6 Tbsp. butter, melted
- 1 1/2 c. seasoned bread crumbs
- 2/3 c. milk
- 2 eggs, beaten
- salt and pepper to taste
- Parmesan cheese
Directions

1Cut a thin slice from the top of tomatoes and scoop out seeds and pulp.

2Salt shells and invert to drain for 15 minutes.

3Cook spinach in salted water.

4Saute onions, celery, parsley, pepper and carrots in butter until onions are brown.

5Add drained spinach to vegetables.

6Stir in bread crumbs, milk, eggs, salt and pepper. Pack mixture in tomatoes and sprinkle with grated Parmesan cheese. Place in buttered baking dish and bake at 400° for 20 minutes.

7May be prepared a day in advance.

8Serves 12.
