- 1 1/2 lb. ground beef
- 2 c. water
- 1 (12 oz.) can cocktail vegetable juice
- 1 (10 oz.) pkg. frozen mixed vegetables
- 1 c. long grain rice
- 1 c. chopped onion
- salt and pepper
- 2 c. shredded cheese
Directions

1Combine all ingredients except cheese.

2Pour into a 9 x 13-inch baking dish. Bake at 350° for 1 1/4 hours.

3Uncover and sprinkle cheese on top.

4Bake for 15 minutes longer or until cheese is melted.
