  • 1 1/2 lb. ground beef
  • 2 c. water
  • 1 (12 oz.) can cocktail vegetable juice
  • 1 (10 oz.) pkg. frozen mixed vegetables
  • 1 c. long grain rice
  • 1 c. chopped onion
  • salt and pepper
  • 2 c. shredded cheese

Directions

    Combine all ingredients except cheese.

    Pour into a 9 x 13-inch baking dish. Bake at 350° for 1 1/4 hours.

    Uncover and sprinkle cheese on top.

    Bake for 15 minutes longer or until cheese is melted.
