- 2 medium onions, chopped
- 1 garlic clove, chopped
- 12 cup bacon drippings
- 1 ham bone or 4 ounces ham
- 2 12 lbs fresh butter beans or 2 12 lbs dried butter beans
- 2 12 quarts water
- salt & pepper
Directions

1Saute onions & garlic in bacon drippings until onions are transparent.

2Add ham bone (or ham), beans & water.

3Season with salt & pepper.

4Bring to a boil.

5Reduce heat & simmer until beans are tender, about 45 minutes for fresh beans or 1.5 hours for dried.

6You may need to add more water if beans start to stick or become dry,.
