- 4 cups milk (1 quart or 1 litre), skim, partly skim or full-fat, organic if possible
- 4 tablespoons (60 ml) liquid buttermilk, from the store or a previous batch
Directions

1Measure milk and put into glass jar or container.

2Add buttermilk culture and stir into milk.

3Cover.

4Allow to incubate for approximately 24-36 hours at room temperature or below 80° F (27° C).

5Milk will thicken and curdle slightly. Save 1/4-1/2 cup for next batch.

6Refrigerate
