- 1 1/4 c. sugar
- 2 Tbsp. self-rising corn meal mix
- 3 eggs, lightly beaten
- 1/2 c. butter, melted
- 1/3 c. buttermilk
- 1 tsp. vanilla
- 1 unbaked 9-inch pastry shell
Directions

1Preheat oven to 350°.

2Stir together sugar and corn meal in mixing bowl.

3Add eggs, butter, buttermilk and vanilla; blend well.

4Pour filling into pastry shell.

5Bake for 40 to 45 minutes or until knife inserted 1-inch from center comes out clean.

6Do not overbake.

7Pie will continue to set as it cools.
