Butternut Squash Locro

- 2 Tablespoons Extra Virgin Olive Oil
- 1 whole Onion, Chopped
- 3 cloves Fresh Garlic, Minced
- 1/2 cups Frozen Peas
- 1/2 cups Frozen Corn
- 2 Tablespoons Tomato Paste
- 3 pounds Butternut Squash, Peeled And Chopped
- 5 ounces, weight Feta Cheese
Directions

1Heat a large pot over medium heat.

2Add olive oil and saute onions and garlic until translucent in color.

3Add frozen peas, corn, and tomato paste and cook for 3-4 minutes, stirring frequently.

4Add chopped and peeled butternut squash and reduce heat to low.

5Cover the pot and let cook for 20-30 minutes, until squash has become soft and slightly chunky.

6At about 5-10 minutes before serving, add feta cheese and stir.

7Serve and enjoy!
