Butternut Squash Locro

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 whole Onion, Chopped
  • 3 cloves Fresh Garlic, Minced
  • 1/2 cups Frozen Peas
  • 1/2 cups Frozen Corn
  • 2 Tablespoons Tomato Paste
  • 3 pounds Butternut Squash, Peeled And Chopped
  • 5 ounces, weight Feta Cheese

Directions

    Heat a large pot over medium heat.

    Add olive oil and saute onions and garlic until translucent in color.

    Add frozen peas, corn, and tomato paste and cook for 3-4 minutes, stirring frequently.

    Add chopped and peeled butternut squash and reduce heat to low.

    Cover the pot and let cook for 20-30 minutes, until squash has become soft and slightly chunky.

    At about 5-10 minutes before serving, add feta cheese and stir.
