Butternut Squash Pasta Bake

- 1 whole Large Butternut (squash)
- 1 whole Onion
- 6 cloves Garlic
- 1 box (16 Oz. Box) Pasta, Penne
- 6 ounces, weight Parmesan Cheese
Directions

1Cut squash in half, remove seeds and fibers.

2Cut onion in quarters.

3Take prepared squash and onions and place on a cookie sheet.

4Brush with canola oil or other high-heat withstanding oil.

5Place cloves of garlic inside the squash or roast a whole head of garlic in foil and add roasted garlic cloves later to the dish.

6Cook at about 400 degrees until tender (1-2 hours), being careful to brush oil occasionally on vegetables.

7Remove vegetables until cool to the touch.

8Prepare pasta as directed on the box.

9Prepare a casserole dish.

10Remove squash flesh from skin (I use tongs) and cut onion and garlic into smaller pieces.

11Place vegetables in the casserole dish.

12Add pasta and mix until evenly distributed.

13Cover with Parmesan cheese, reserving some to add when eating.

14Bake in a 350-degree oven for 10-15 minutes until warmed through.
