Butterscotch Bread Pudding

  • 4 c. bread cubes (do not pack)
  • 1/2 c. seedless raisins
  • 2 c. scalded milk
  • 1/2 stick butter
  • 1 c. light brown sugar
  • 2 eggs, beaten
  • dash of salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. vanilla

    Combine bread and raisins; add milk.

    Let stand for 15 minutes.

    Cook butter and brown sugar together over low heat until syrupy (about 10 minutes).

    Mix eggs, seasonings and vanilla; add with sugar mixture to moisten bread.

    Pour into greased 1 1/2-quart casserole.

    Bake at 350° for 35 minutes.
