Buttery Peanut Brittle

- 2 c. sugar
- 1 c. white syrup
- 1/2 c. butter or margarine
- 1/2 c. water
- 2 c. raw peanuts
- 1 tsp. soda
Directions

1Lightly butter 2 large cookie sheets (Pam may be used).

2Do not use Teflon cookie sheets; it will ruin them.

3Combine sugar, syrup and water in 3-quart or larger saucepan.

4Cook and stir until sugar dissolves.

5When syrup boils, blend in the butter. Stir frequently after mixture reaches the soft crack stage (270°). Add nuts; stir constantly until temperature reaches hard crack stage (305°).

6Remove from heat.

7Quickly stir in soda, mixing thoroughly.

8Pour onto cookie sheets.
