Cabbage Slaw

- 1 1/2 lb. head cabbage
- 1 c. sugar
- 1/2 c. cider vinegar
- 1/2 tsp. ground white pepper
- 1/2 tsp. salt
- 1/2 tsp. celery seed
- 1 Tbsp. chopped fresh parsley
- 1 carrot, grated (optional)
Directions

1Core the cabbage and shred or grate into slaw.

2Place in a large bowl and add the sugar, vinegar, pepper, salt and celery seed.

3Press together with your hands until completely blended and liquid starts to form in the bottom of the bowl.

4Fold in the parsley and carrot (for added color and flavor).

5Cover and chill in the refrigerator for at least one hour.

6Makes about 5 cups of slaw.
