Ingredients

  • boned, skinned chicken
  • smoked sausage
  • 1 can Ro-Tel tomatoes
  • 1 tsp. thyme, cayenne pepper, salt and sugar
  • 2 Tbsp. cornstarch
  • 1 1/2 c. chicken broth
  • 2 to 3 c. rice, cooked and chilled
  • 1 bay leaf
  • 1 or 2 fresh tomatoes, cut up

Directions

    Brown chicken in skillet with oil.

    Add all but rice; bring to boil.

    Simmer 30 minutes.

    Before serving, add rice and heat through.

    Take out bay leaf and serve.
