Cajun Chicken Drumsticks

  • 1 tsp. cayenne pepper
  • 1 tsp. ground coriander
  • 1 tsp. ground cumin
  • 2 tsp. mustard powder
  • 1 pinch salt
  • 2 cloves garlic, crushed
  • 2 Tbsp. tomato puree
  • 2 Tbsp. lemon juice
  • 1 Tbsp. Crisco oil
  • 8 chicken drumsticks

    Preheat the oven to 350°.

    In a bowl mix together all the spices and salt with the garlic, tomato puree, lemon juice and oil.

    Wipe the chicken and, using a pastry brush, cover them with the spice paste.

    Place the drumsticks in a roasting pan.

    Bake for 30 to 35 minutes, until the skin turns a deep brown and is quite crisp.

    Serve the drumsticks with rice and fresh salad.
