- 1 onion medium, chopped
- 1 green pepper chopped
- 1 clove garlic minced
- 1 teaspoon butter
- 2 tomatoes seeded and chopped
- 1 cup dry red wine
- 1 teaspoon dried thyme
- 1 teaspoon cayenne pepper
- 20 ounces cod fillets
- 2 tablespoons lemon juice
Directions

1Saute the onion, green pepper and garlic in butter until tender. Add the tomatoes, wine, thyme and cayenne. Bring to a boil.

2Add the cod, reduce the heat, cover, and simmer for about 10 minutes ot untilthe fish flakes.

3Add the lemon juice before serving.
