- 1 large hen, cut in pieces
- 1 wild duck, cut in pieces
- 1 lb. pork sausage
- 1 link smoked sausage
- 1 large onion, diced
- 1 envelope onion soup mix
- parsley
- Louisiana hot sauce
- roux
- salt and pepper
Directions

1Place hen in large baking pan and brown well.

2Brown duck and sausage in Dutch oven.

3Meanwhile, fill a large gumbo pot half full of water.

4Boil on high.

5Add onion soup mix, onion and roux (about 1/2 pint, depending on how dark you like your gumbo). Drain meat well and add to gumbo.

6Add salt, pepper and hot sauce to taste.

7When meat is almost cooked; add parsley.

8Serve over hot rice.
