  • 5 lb. potatoes, scrubbed clean
  • 2 Tbsp. parsley flakes
  • 2 Tbsp. garlic powder
  • 3 Tbsp. Cajun seasoning (Luzianne cajun seasoning)
  • 1 tsp. pepper
  • 1/2 tsp. salt
  • 3/4 c. olive oil
  • 1/2 stick butter
  • large baking dish

Directions

    Dice and cook potatoes; drain.

    Saute diced onions with paprika.

    Add lots of chopped fresh parsley.

    Salt and pepper. Toss over cooked potatoes.

    Serve hot as side dish.
