  • 1 onion, chopped
  • 4t olive oil
  • 1/2 giant summer squash
  • 3 banana peppers, seeded and sliced
  • 1 red or orange pepper, diced for color
  • 16 oz can corn
  • salt and pepper
  • 1/4 Cup milk
  • 1/2 C Mexican shredded cheese
  • chili powder and paprika to taste

    Saute vegetables in oil until squash is almost soft

    Add other stuff and warm - very easy
