Calamari Supremo

Ingredients

  • 1# Calamari cut into rings
  • Vegetable oil
  • about 1 cup of Wondra
  • Salt
  • Pepper
  • 1/2 tsp. Wasabi
  • about 1/2-3/4 cup honey
  • a splash or two of half and half
  • a squeeze of lemon

Directions

    Dry the calamari somewhat in paper towels. Dredge the calamari in a mixture of Wondra, salt and pepper. Shake off the excess Wondra in a strainer and toss into hot vegetable oil and fry for 2-4 minutes. Fry a few at a time. Set aside.

    Make the sauce by mixing the honey, a little at a time into the Wasabi until the bitterness is gone and it is mildly sweet. Add a splash at a time of 1/2 and 1/2 until the texture is like cream and the color light yellow. Add a squeeze or two of lemon and drizzle over the calamari and serve.
