Calico Bean Soup

- 2 c. (16 oz.) assorted dry beans
- 8 c. water
- 1 1/4 lb. ham hocks
- 1 (28 oz.) can whole tomatoes, undrained and cut up
- 1 c. chopped onion
- 1/2 c. chopped carrots
- 1 tsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 lemon slice (1/2-inch thick)
Directions

1Soak beans for 12 hours.

2Drain beans; add 8 cups water and ham hocks.

3Bring to a boil.

4Reduce heat; cover and simmer 3 hours.

5Add tomatoes, onions, carrots, chili powder, salt, pepper and lemon.

6Bring to a boil.

7Reduce heat; simmer 30 minutes. Remove bones from soup; cut meat from bones.

8Return meat to soup. Remove and discard lemon slice.

9Makes 10 (1 1/4 cup) servings.
