  • 2 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 3/4 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/3 c. sugar
  • 2 eggs (room temperature)
  • 1 c. unsweetened applesauce
  • 1/4 c. melted butter
  • 1/4 c. miniature candies (red hots)

Directions

    Grease 12 muffin cups or line with paper liners.

    Preheat oven to 350°.

    In large bowl combine flour, baking powder, salt, cinnamon and sugar; set aside.

    In medium bowl lightly beat eggs. Stir in applesauce and butter.

    Stir into flour mixture only until dry ingredients are moist.

    Add cinnamon candies quickly to keep color from spreading.

    Spoon into muffin cups 3/4 full.

    Bake 25 to 30 minutes.
