  • 1 c. evaporated milk
  • 1/4 c. mandarin juice
  • 3 Tbsp. mandarin peel
  • 3 c. sugar
  • 1/4 tsp. salt
  • 1 c. nut meats

Directions

    In a double boiler, heat evaporated milk.

    In a saucepan, melt 1 cup sugar until it is a rich brown, slowly stir in boiling mandarin juice.

    Add this mixture to the hot milk.

    Stir in 2 cups sugar and salt.

    Cook this syrup slowly to the soft ball state. Stir frequently, add the mandarin peel.

    Cool.

    Beat the mixture until it is creamy.

    Add nut meats.

    Drop by spoonfuls onto waxed paper.

    Makes about 3/4 pound.
