- 1 large cantaloupe
- 1 c. sugar
- 2 Tbsp. cornstarch
- 2 eggs
- 1/4 tsp. salt
- 1 large pastry shell
Directions

1Cut cantaloupe in half; remove seeds.

2Cut up pulp and put into a double boiler with sugar.

3Mix cornstarch with a little cold water and add to cantaloupe.

4After mixture thickens, add beaten egg yolks and salt; cook a little longer.

5Cool.

6Pour into baked pastry shell.

7Spread with meringue made from egg whites and 1/4 cup sugar; flavor with lemon.

8Brown meringue in oven at 325°. Cool before serving.
