  • 2 1/2 or 3 lb. boneless skinless chicken breasts
  • 1 (10 oz.) jar apricot preserves
  • 1/4 c. soy sauce
  • 1/4 c. sherry
  • 1/4 c. finely chopped onions
  • 2 Tbsp. cornstarch

Directions

    Place chicken in 12 x 8 inch baking dish.

    Combine remaining ingredients; pour over chicken.

    Bake at 325° for 1 hour, turning occasionally.

    Serve with fluffy rice and tossed greens.
