Capirotada (Bread Pudding)

- 1 loaf white bread
- 2 c. brown sugar
- 1 1/2 cinnamon sticks
- 1 tsp. whole cloves
- raisins
- pecans
- peanuts
- coconut, shredded
- candy sprinkles
- 1 lb. shredded Monterey Jack cheese
Directions

1Toast bread in oven.

2Combine brown sugar, cinnamon sticks and cloves in a saucepan with 1 1/2 quarts water.

3Bring to a boil, stirring constantly.

4Reduce heat just enough to keep mixture warm. In a 9 x 13-inch baking dish, layer the toast first, then the cheese, next the raisins, pecans, peanuts, coconut and sprinkles (using as much as desired or omitting if you do not like).

5After each layer, pour some of the brown sugar mixture on top.

6When complete, bake in a 350° oven for 20 minutes.
