- 2 c. sugar
- 2 c. light corn syrup
- 1/8 tsp. salt
- 1/2 c. unsalted butter (1 stick)
- 2 c. evaporated milk
- 1 tsp. vanilla
Directions

1Place sugar, syrup and salt in a 3-quart heavy saucepan; cook over medium-high heat until mixture reaches firm ball stage (244°), stirring as needed. Add butter and stir while it melts. Slowly add milk, keeping mixture boiling.

2Cook rapidly and stir constantly until mixture reaches firm ball stage again.

3Remove from heat.

4Add vanilla, then pour into a buttered 9-inch square pan.

5Cool thoroughly before cutting.

6Makes 81 caramels (1 x 1-inch).
