Carol's Chicken 'n Vegetable Soup

Ingredients

  • 6 cup chicken broth
  • 3 medium carrots, chopped
  • 2 sm. zucchini, chopped
  • 6 tbsp flour
  • 1/2 can green onion, chopped
  • 1/2 cup uncooked rice
  • 6 tbsp butter
  • 2 cup milk
  • 2 cup chopped, cooked chicken
  • 1 salt, pepper and parsley to taste
  • 3 stalks celery, chopped

Directions

    In a lg saucepan over high heat, bring broth to a boil.

    Add rice, cover, reduce heat and simmer for 10 minutes.

    Add carrots, zucchini and celery and simmer, covered, for 10 minutes.

    In a sm saucepan over medium heat melt the butter.

    Stir in the flour and cook until bubbly.

    Remove from heat and gradually add milk, then stir in 1 cup of broth from soup mixture.

    Return to heat and cook until sauce is thick and bubbly.

    Stir sauce into soup mixture, add chicken and spices.
