  • 3 medium carrots, sliced
  • 34 cup boiling water
  • 1 cup apple juice or 1 cup apple cider, chilled

    In covered small saucepan, cook carrot in the boiling water about 15 minutes or until very tender; do not drain.

    Cool slightly.

    Transfer carrot mixture to blender.

    Add apple juice.

    Cover and blend until smooth.

    Chill before serving.
