- 3 medium carrots, sliced
- 34 cup boiling water
- 1 cup apple juice or 1 cup apple cider, chilled
Directions

1In covered small saucepan, cook carrot in the boiling water about 15 minutes or until very tender; do not drain.

2Cool slightly.

3Transfer carrot mixture to blender.

4Add apple juice.

5Cover and blend until smooth.

6Chill before serving.
