- 1 1/2 c. flour
- 1 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 2 eggs
- 1 c. sugar
- 1/2 c. oil
- 1 c. mashed carrots
- 1/2 c. chopped nuts
Directions

1Sift together flour, soda, cinnamon and salt; set aside.

2Beat eggs and beat in sugar, oil and carrots.

3Gradually beat in flour mixture.

4Stir in nuts.

5Pour into greased 9 x 5-inch loaf pan and bake in preheated 350° oven for 55 to 60 minutes.

6Cool 10 minutes in pan, then turn onto a rack to cool.
