  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 eggs
  • 1 c. sugar
  • 1/2 c. oil
  • 1 c. mashed carrots
  • 1/2 c. chopped nuts

Directions

    Sift together flour, soda, cinnamon and salt; set aside.

    Beat eggs and beat in sugar, oil and carrots.

    Gradually beat in flour mixture.

    Stir in nuts.

    Pour into greased 9 x 5-inch loaf pan and bake in preheated 350° oven for 55 to 60 minutes.

    Cool 10 minutes in pan, then turn onto a rack to cool.
