- 1 c. vegetable oil
- 3 eggs
- 2 c. flour
- 1 1/2 tsp. cinnamon
- 1 tsp. baking soda
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 3 c. grated carrots
Directions

1Heat oven to 350°.

2Grease and flour 9 x 13 x 2-inch pan.

3Mix sugar, oil and eggs until blended; beat 1 minute.

4Stir in remaining ingredients except carrots.

5Beat 1 minute.

6Stir in carrots.

7Pour into pan.

8Bake until wooden pick inserted in center comes out clean, 35 to 45 minutes.
