  • 1 3/4 cups all-purpose flour
  • salt
  • 2 teaspoons baking powder
  • 1/4 teaspoon cinnamon
  • 2 eggs
  • 6 3/4 tablespoons vegetable oil neutral
  • 6 3/4 tablespoons milk
  • 1 2/3 cups brown sugar
  • 2 teaspoons vanilla extract
  • 1 3/4 cups chopped walnuts
  • 2 cups carrots grated
  • 5/8 cup grated coconut
  • 1/2 cup cream cheese
  • 1 2/3 cups icing sugar

Directions

    Preheat oven to 355 degrees Fahrenheit.

    In a large bowl, mix the flour, salt, baking powder and cinnamon. Set aside.

    In another bowl, mix the eggs, oil, milk, sugar and 1 teaspoon of vanilla extract.

    Mix together the two preparations, then add the nuts, carrots and coconut.

    Pour the preparation into a buttered mold and bake for 1 hour.

    In the meantime, prepare the icing: mix the cream cheese with the icing sugar and the remaining teaspoon of vanilla extract. Whisk well so that hte frosting is smooth.

    Once cooled, unmold the carrot cake on a pretty serving dish and spread the icing on top.
