- 2 c. sifted all-purpose flour
- 4 tsp. baking powder
- 1 tsp. salt
- 2/3 c. sugar
- 1 c. chopped nuts
- 3/4 c. finely cut dried, uncooked apricots or dates
- 1 egg
- 1 c. milk
- 3 Tbsp. melted shortening
Directions

1Set oven at 375° to preheat.

2Sift together in large mixing bowl, flour, baking powder, salt and sugar.

3Add remaining ingredients and beat on medium speed until mixed, about 1/2 minute.

4Turn into greased 9 x 4 x 3-inch loaf pan.

5Let stand about 20 minutes before baking.

6Bake about 1 hour or until toothpick inserted in middle comes out clean.

7Turn out of pan. Cool on cake rack.

8Slices better 1 day old.
