- 2 cups sugar
- 2 cups flour
- 1 12 cups oil
- 1 teaspoon salt
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 3 cups grated carrots
- 5 eggs
- 1 12 cups chopped walnuts (optional)
- 1 (8 ounce) package cream cheese
- 14 cup margarine
- 1 lb powdered sugar
- 2 teaspoons vanilla
Directions

1For the cake: Preheat oven to 350 degrees.

2Combine dry ingredients.

3Stir in oil, eggs and grated carrots.

4Beat for 2 minutes by hand.

5Add nuts and mix thoroughly.

6Bake in greased and floured 13 x 9 inch pan for 45 minutes.

7For the frosting: Beat the cream cheese, margarine, powdered sugar and vanilla till light and fluffy.

8Spread on cooled cake.
